Best vegetable soup recipe:
This super easy to make easy, healthy and tasty mix vegetable soup recipe. It takes about 20 minutes from beginning to end to make a large pot of this delicious and hearty soup. I have shared a basic recipe here. Flavor it and spice it to your liking!
You can make vegetable soup with any vegetable of your choice. The taste and taste of the soup depends on the vegetables and spices. So make the right choice!
Most of the times I make soup to use extra vegetables or when someone at home is suffering from cold and congestion.
Last weekend we went to an Indo Chinese dinner. So I had to make this mix veg soup and vegetable food. After making the soup I was left with a lot of chopped vegetables that I used to make chinapakoda. TheVegetable soup, the combination of schezwan sauce and noodleswa with sugar pakora is so good that I thought of sharing the recipes here.
If Indo Chinese cuisine is not your thing, then just serve this soup with Somesandwichroches toast. Rub all the vegetables under running water and chop them finely. Make sure all veggies are the same size otherwise one pulp and passes through the other. Peel ginger and garlic too.
How to make vegetable soup recipe
Heat oil in a pot. Add ginger, garlic and spring onion greens for a minute or 2. If you are using bay leaf and cinnamon, you can add them here first.
- Add all the veggies.
- Then add in cabbage or any other leafy greens.
- Fry them all on high heat for 2 to 3 minutes to bring fragrance.
- Pour water or stock. I used water here.
- Cover and cook until slightly tender.
- Meanwhile in a separate bowl mix cornstarch or arrow root powder with half a cup of water. Make sure it is outright.
If using boiled potatoes, pour it into a blender jar and add half a cup of water. Puree to a smooth paste. I usually add 2 cups of water to the pot and then 1 cup for potato puree.When the vegetables become slightly soft, add corn starch to the boiling vegetable soup. Stir continuously and cook until it becomes slightly thick.
Add salt and sugar (optional).
Then add crushed chili. You can also add white pepper.
When the soup becomes slightly thick, close it. It becomes more thick after cooling. Very thick soup tastes of starch so do not over-thicken it. The soup should flow free and should not be too thick.
I like to add apple cider vinegar when the soup cools down a bit. Taste the soup is good. if you want to add more salt as like.
Add red chili flakes and more spring onion greens.
- Serve vegetable soup hot or hot.
Which vegetables can I add to the soup?
- I usually use cabbage, carrots, beans, spring onions, mushrooms, broccoli, cauliflower, Indian spinach (spinach), peas and sweet corn.
- Apart from the veggies mentioned in the recipe you can also add about
- Half a cup of Indian spinach or baby spinach (measured loosely)
- 2 to 3 finely chopped mushrooms
- ½ cup broccoli or cauliflower
- Replace cabbage with bo choy
- You can add 1 cup more water for every addition of veggies.
Tips for making vegetable soup
Veggie: The key to a good veg soup is the amount of veggies used. The quantity below goes well for our taste.
Spices: 1 bay leaf, half inch slice of real cinnamon, black pepper, red chili flakes and allspice are spices that go well in this soup.
Rogan: This recipe uses flour to thicken the soup. You can use oat powder, barley powder, corn starch or arrowroot powder. Although the dough can be replaced with 1 medium boiled potato. (Description in recipe card notes).
Ginger optional. If you have young children, you can leave it tight or use it.
Vinegar or lemon juice and ginger are great for sore throat, detox and even congestion. If you do not like the flavors, you can also leave them out.
Skip the flour or starch for all these variations. These are healthy versions of the same recipe that I make for my family.
Noodle Vegetable Soup: After a boil in water, I add about 1 serving organic dry noodles. The noodles cook and thicken the soup. You will need 1 cup more water.
Curry Vegetable Soup: Just add desired amount of curry powder. I have tried it with Pav Bhaji masala and it tastes great.
Quinoa Vegetable Soup: I add about 4 tablespoons of quinoa to the same recipe. Insert them only after the wedges are halved.
Chicken Vegetable Soup:
You can add about half a cup of cooked or grilled and sliced chicken. I usually set the bone-in chicken in a teaspoon of oil until it peels and then cook it in water until tender. Then finally I make vegetable soup and add chicken stock to it. I shook the chicken and added it. It tastes yum.

- 1 tablespoon flour (or 3 tablespoons oat powder or 1 tablespoon arrowroot powder) (optional) (see note)
- ¼ water (to mix with flour)
- Easteaspoonsalt (adjusted to taste)
- Eas1teaspoonsugar (optional)
- 1 tsp (apple cider) or lemon juice
- ¼ toteaspoonred chili flakes
- ¼ toteaspoonpepper powder (crushed black pepper)
- 1 small leaf
Preparation for vegetable soup recipe:
Rub the vegetables well and chop finely. You can use of these food processor.
Mash the ginger and garlic.
How to make vegetable soup
Heat oil in a pot.
Fry garlic, ginger, bay leaf (optional) and spring onion white for a minute.
Then mix all other vegetables and fry for 2 minutes on high flame to bring out the aroma.
Add water or stock and cook until the veggie becomes slightly soft.
Meanwhile stir in the corn starch in कप cup of water.
Pour the corn starch mixture into the boiling vegetable soup.
Cook while stirring continuously with a little shake. It will thicken when cooled.
Add pepper, salt and sugar. Stir and turn off the stove. Let it cool down a bit.
Then add vinegar and chili flakes. Taste the soup and if necessary you can add more salt Serve vegetable soup with hot or hot noodlescores toast.

To make oats or barley flour, simply roll oats or barley powder into a blender to get a fine powder. If using potato, puree it in a blender with 1 cup of water until smooth and pour it. But the vegetable soup will have potato flavor, so mix it with bay leaf, cinnamon or any spice powder.
