Peppered Roast
Tenderloin

Here's a delicious beef recipe that's quick and
easy! You can even use the leftovers for salads, stir fries and sandwiches later
in the week!
Ingredients:
2 pounds, 6 ounces beef tenderloin
2 garlic cloves, cut lengthwise into slivers
1 T. plus 2 tsp. olive oil
1 T. cracked black peppercorns
1/2 tsp. rosemary
1/2 tsp. thyme
1/2 tsp. sage
Salt if desired
Directions:
* Preheat the oven to 425 degrees.
* Make small cuts in the tenderloin with a sharp knife and insert a sliver of
garlic in each cut.
* Rub tenderloin with oil and combined remaining ingredients, patting on all the
sides of the tenderloin.
* Roast tenderloin in a shallow roasting pan for 10 minutes. Reduce heat to 350
degrees and roast for another 15 minutes. If you prefer to cook the tenderloin
medium instead of rare, cook for another 5 minutes.
* Remove from oven and let the roast rest for 10 minutes before slicing.
