Pink Grapefruit Spritzers

This cool and refreshing citrus drink can be partially prepared a day ahead, making it a wonderful treat for entertaining guests.  This recipe serves 8.

Ingredients:

1 pink grapefruit

1 navel orange

5 c. chilled grapefruit-tangerine juice cocktail, such as Ruby Tangerine 

1 chilled liter bottle of club soda 

1/2 c. fresh raspberries

Garnish with mint sprigs

Directions:

* Cut a thin slice off the top and bottom of both the orange and grapefruit.  Place cut side down, and cut off peel from the sides (being sure to cut off the inside white part too.)

* Cut between the membranes and drop orange and grapefruit sections into a large bowl, then squeeze juices from membranes into the bowl as well.

* Drain juices from the bowl into a large pitcher.  Add juice cocktail and club soda (champagne or sparkling wine can be substituted for the club soda).

* Place citrus sections and raspberries evenly into 8 glasses, then add juice mixture and garnish with a sprig of mint.

 

Makes 8 servings.
