Peach-Ginger Salsa

While the summer may be almost over, peaches are still fresh and delicious at the markets. Why not try this new recipe for peach and ginger salsa... it makes a great complement for anything from tortilla chips to grilled chicken!

Ingredients:

1 c. cubed peeled peaches (2 peaches)

1 c. cubed seeded tomato (2-3 tomatoes)

1/4 c. sliced green onions

2 t. sugar

2 t. cider vinegar

1 t. minced peeled fresh ginger

1/8 t. salt

Dash freshly ground black pepper

Directions:

Combine all ingredients, stir well, and chill.

Serving Size: 1/2 cup
