Oven Dried Tomatoes

With neighbors dropping off their garden overflows I've picked another recipe for tomatoes this week, just in case anyone else has been blessed with such a wonderful abundance, and I hope you have! Use these dried tomatoes in just about any recipe you desire, even mashed potatoes.

Ingredients:

8 plum tomatoes (Surely this recipe will work with regular tomatoes too, though the plum tomatoes would be even better.  Just keep in mind that plum tomatoes are about half the size of a regular tomato, so you may only want to use 4.)

1 tsp. sugar

1 T. balsamic vinegar

Directions:

* Preheat oven to 225 degrees.

* Slice tomatoes as you normally would for sandwiches, then spread into a single layer on a baking pan (with rims).

* Sprinkle tomatoes with sugar and vinegar.

* Bake for 2 1/2 hours, turning the slices over after 1 hour.

* Store in an airtight container in the fridge for one week, or freeze if longer storage is needed.
