Mocha-Chocolate Trifle

If you're not having family over for Christmas then you'll have to invite the neighbors so you can share this spectacular low-fat dessert, what a great way to end 2002!

Ingredients:

1 pkg. devil's food cake mix, lite version
1 1/3 c. water
2 T. vegetable oil
2 large egg whites
1 large egg
3 c. cold skim milk
1 3.9-ounce pkg. chocolate instant pudding mix (do not use the sugar-free or fat-free kind, apparently it will mess up the recipe)
1/2 c. Kahlua or strong brewed coffee 
1 8-ounce container of fat-free Cool Whip® (whipped topping)
4 reduced fat chocolate toffee bars, chopped (Hershey's Sweet Escapes®)

Directions:

* In a large bowl, combine first 5 ingredients and beat at medium speed with a mixer, until blended well. 

* Spread batter into a 13x9-inch baking pan, prepared with cooking spray.  Bake at 350 degrees for 25 minutes.  Remove from oven and cool on wire rack for 10 minutes.  Remove cake from pan and cool completely.

* Combine pudding mix and milk in a medium bowl, and prepare according to directions on box.

* Break cake into bite-size pieces, placing half of them in a 3-quart trifle dish or glass bowl.  Pour Kahlua or coffee over cake pieces and top with half of the pudding, then half of the whipped topping and half of the chopped toffee bars.  Repeat layers with remaining ingredients.

* Cover the trifle and chill for at least 4 hours.

Makes 16 servings (That's where the neighbors come in!)
