Layered Salad

As a member of Weight Watchers, Jackie says this is one of her favorite recipes. Although it is a little higher-in-fat than most of the recipes we feature, you could make just a few changes to get it lower, and it would still taste great.Directions:
1 head lettuce, chopped
1 c. celery, chopped
4 eggs, chopped
10 oz frozen peas, thawed, uncooked
1/2 c. pepper, chopped
1 c. grated cheese
1 med onion, chopped
8 slices bacon, cooked and crumpled
2 c. light mayo mixed with 4 equals
Top with 4 oz grated cheeseWeight Watchers: 1 Cup = 2 points
* Tips for lowering the fat and cholesterol in this recipe... use only the white portion of the eggs (or maybe just add 1 of the yellow parts), use low-fat cheese, and use 1-2 pieces of bacon instead of 8 for that extra flavoring. You might try using less mayo, or even the fat-free.
