A Great Pasta Dish with No Name

This recipe is one of Jennifer's family favorites, she says "since it's homemade, it has no name!" This one calls for feta cheese and a fresh tomato, it sounds wonderful!

Ingredients:

Pasta
Fresh tomato
Feta cheese
Olive oil
Salt
Pepper
Coriander

Directions:

Cook the pasta to desired tenderness. Drain and return it to the pot. Cut the tomato and the feta cheese into small chunks, add into the pasta.

Drizzle a few tablespoons of olive oil over the top. Add salt, pepper and coriander to taste. Warm over very low heat, stirring gently until the tomato is warm and the feta cheese is soft.

This makes a fairly light meal when served with a side salad. You can decrease the fat by using a "Light" feta cheese, found in the deli/dairy aisle.
