Double Fudge Brownies

Healthy eating doesn't mean complete sacrifice, we just have to cut back on the bad stuff and learn how to cook things in a healthier way.  And where there's a will to eat chocolate... there's a low-fat way!

These brownies are very dense and gooey, hence the name I've given them... DOUBLE FUDGE!

Ingredients:

5 T. butter (butter is healthier than margarine, at least that's what they're saying for now)
1 ounce unsweetened baking chocolate
2/3 c. unsweetened cocoa (Dutch process if possible)
1 1/2 c. sugar
3 large egg whites, slightly beaten
1 large egg, slightly beaten
1 c. flour, all-purpose
1/2 tsp. baking powder
cooking spray

Directions:

* Preheat oven to 325 degrees.  Combine butter and chocolate in a large saucepan, melt slowly over medium heat. 

* Add cocoa powder to melted chocolate and cook for 1 minute.  Add sugar and cook for 1 additional minute.  Remove saucepan from heat and cool for a few minutes.   

* In a small bowl, combine the egg whites and the whole egg.  Then gradually add the melted chocolate mixture to eggs, stirring with a whisk.  Blend well.

* In another small bowl, combine flour and baking powder.  Add flour mixture to the chocolate and stir well.

* Lightly spray a 9-inch square baking pan with cooking spray.  Spoon batter into pan and bake at 325 degrees for 25-27 minutes.

* Remove pan from oven and cool on a wire rack.

Makes 20 small brownies... have one and give the rest away! ;o)
