Chocolate Éclair Graham Cracker Dessert

This delicious éclair dessert recipe has been passed around from neighbor to neighbor for many years, and here's a wonderful low-fat version.  It has a few more calories and WW points than most of our recipes, but it's a definite keeper! 

Ingredients:

1 box low-fat honey graham crackers
3 c. skim milk, cold
2 (3.4-ounce) packages vanilla fat-free instant pudding (do not use sugar-free)
1 (8-ounce) package fat-free cream cheese
1 (8-ounce) container fat-free Cool Whip whipped topping, thawed
1/4 c. skim milk
2 T. butter or margarine, softened
2 T. honey
2 ounces unsweetened chocolate, melted
1 1/2 c. sifted powdered sugar
cooking spray

Directions:

* Coat a 13x9 baking pan with cooking spray.  Arrange 7 1/2 graham cracker sheets in bottom of the pan.  

* Make creamy filling by combining 3 cups milk, pudding mix and cream cheese with a mixer for about 1 minute, until thick. Fold in Cool Whip.

* Spread half of filling mixture over the graham crackers, then top with another layer of graham crackers and repeat with filling and graham crackers (ending with a third layer of graham crackers on top).

*  For the chocolate topping, combine 1/4 c. milk, butter, honey and chocolate with a mixer until well blended.  Gradually add powdered sugar, beating until blended well.

* Spread chocolate topping over graham crackers and cover loosely with foil.  Chill for at least 4 hours. Cut into 18 squares.
