Date Walnut Cake

This cake is made with semolina flour and honey, like many Greek and Middle Eastern sweets. It's a delightful and low-fat dessert, with only 2 grams of fat per serving!
Ingredients:
Cake
3/4 c. sugar
3/4 c. non-fat yogurt, plain
1 1/2 c. semolina flour*
3/4 c. chopped dates
1/2 c. chopped walnuts
2 tsp. grated orange zest
1 tsp. baking soda
Honey Syrup
1/3 c. sugar
1/3 c. orange juice
1/3 c. honey
1 T. lemon juice
1 tsp. ground cinnamon
*Semolina or Semolina Flour is a golden, granular flour milled from the hearts of protein-rich durum wheat berries. Sometimes referred to as pasta flour, it can be found in Gourmet or Italian stores or large grocery stores which also carry a wider selection of flour.
Directions:
* Prepare a 8x12 or 7x11 oblong baking pan with cooking spray and preheat oven to 325 degrees.
* Stir together sugar and yogurt in a large mixing bowl, then add remaining cake ingredients and stir until well combined.
* Spread cake batter into prepared pan and bake for 30-40 minutes or until golden and set in the center.
* Before the cake is done, prepare Honey Syrup. Combine all the ingredients in a medium size pot over low heat and cook for 4-5 minutes.
* Remove cake from oven and cut into 15 pieces. Spoon hot syrup evenly over the top of cake, allowing some to drizzle down into the cuts and around the edges of the cake.
* Cool cake in the pan and serve warm or at room temperature.
