Curried Turkey Pita
Recipes by Our Readers, CookingLow-Fat.comI recently made a very yummy dinner that I found on the web, then modified it a bit. I call it Curried Turkey Pita. It's a good way to use leftover turkey! It serves 3 if you want full pita pockets but 4 if you stuff lightly.
Ingredients:
1 small onion, sliced
1 T. olive oil
2 T. lemon juice
1 tsp. curry powder (or to taste-I like more)
1/2 lb. cooked turkey, cut in thin strips
1 medium crisp, tart apple
cored and thinly sliced
1/2 c. plain yogurt (low-fat tastes better)
a few sprinkles of sesame seeds (optional)
3-4 pita pockets, lightly toasted
Directions:
* Sauté onions over medium in oil, lemon juice, and curry in non-stick skillet until crisp-tender. Stir in turkey and heat through. Remove from heat, stir in apple. Fill pita with turkey mixture and drizzle with yogurt. Serve warm.
Notes: the original recipe called for green and red bell pepper but no one in our house likes them so I omitted them. It also called for a Golden Delicious apple or Winesap but I didn't have either. I used a different yellow apple that was a little more tart and crisp which made it much better than the mushy golden delicious! My preference though! Also, the original recipe didn't call for curry but I thought the turkey and apple would lend itself well to the spice. But anyway, this was so delicious that I had to pass it on!
