Chocolate Pudding (made with tofu)

If you like chocolate this recipe is worth trying, weighing in at only 100 calories and 2 grams of fat per serving!

Ingredients:

1 (12.3 ounces) package of light silken tofu 
1 small package instant sugar-free chocolate pudding mix
2/3 c. non-fat dry milk powder
1 c. cold coffee
1 c. fat-free Cool Whip (whipped topping)
1 T. finely chopped pecans (almonds might be good too)

Directions:

* Process the tofu in a blender until smooth. 

* Add pudding mix, milk powder and coffee, blend again until smooth (scraping sides as needed).

* Place pudding mixture into a bowl and fold in 3/4 c. of the Cool Whip.  

* Spoon pudding into 6 individual serving cups and chill for 30 minutes.

* Top with remaining Cool Whip and sprinkle with chopped nuts.

Makes 6 servings
