Broccoli and
Red Pepper Toss

Broccoli is my
favorite vegetable, it's also one of the most nutritious. But I'll admit it's a
little boring to have just plain broccoli every week, and we certainly don't
want to cover it with melted cheese! Instead of adding all that fat, why not try
this recipe to spice things up a bit...
Ingredients
3 cups broccoli flowerets
1/2 cup diced red bell pepper
2 tablespoons butter or margarine
1 garlic clove, finely chopped
1 teaspoon lemon juice
1/8 teaspoon salt
Directions
1. Bring 6 c. water to boiling in 2-quart saucepan. Add broccoli and return to
boil. Boil uncovered for 2 minutes.
2. Add red bell pepper to saucepan. Boil 1 to 2 minutes longer or until
vegetables are crisp-tender. Drain and remove from saucepan.
3. Next, add butter to saucepan and cook garlic over medium heat until golden in
color, stirring occasionally. Stir in the lemon juice and salt. Return broccoli
mixture to saucepan; toss to coat.
