Banana Pineapple Nut Cake

Simply delicious, moist and lower in fat that most banana cakes. By the way, no one will even notice that it’s lower in fat because it tastes so good!

Directions:

Mix the following ingredients together in a bowl:
3 Cups self-rising flour
1 teaspoon cinnamon
2 cups sugar
1 cup chopped walnuts

Mix the next list of wet ingredients in a separate bowl:
1-8 ounce can crushed pineapple with juice
1-½ teaspoons vanilla
3 eggs
¾ cups oil
¾ cups apple cider/or juice
3 medium bananas, mashed

Combine all ingredients listed above together in one bowl and mix thoroughly. Grease the pan you are going to use with a small amount of margarine and sprinkle a little sugar in the bottom and shake it all around to coat the bottom sides of the pan.

You must leave a one-inch boarder around the top of the pan dry so the cake can rise up above and form a rounded edge. Bake in 2 loaf pans or one 9 x 12 inch cake pan, or you can bake ½ of the batter in one loaf pan and bake the rest of the batter in muffin tins.

If you use only muffin tins just grease the bottom or use muffin cup papers to avoid sticking. Bake at 350 degrees for 1 to 1-¼ hours for loaf pans or approximately 30 to 45 minutes for 9 x 12 pan or 8 – 12 minutes for muffins.

We don’t want any burnt cakes so always check to see if done early in case you have an extra hot oven, adjust temperature accordingly.

I discovered something recently about baking this cake. I had just put it in the oven for 10 minutes when I got an emergency call from my mother whose car had broken down on the interstate. I turned the oven off, not knowing how long I would be gone and rushed out the door to go get her. When I got back about 1-½ hours later the cake was almost done. I only needed to turn the oven on for about 5 more minutes and let the cake sit for a short while. Of course I checked the center with a toothpick to see if it was cooked inside. This may end up being a new way to cook in the future saving electricity. Oh well, food for thought.

By the way my mother was fine, a bit nervous, but she had AAA come tow her car to the repair shop and all worked out well.
